Iced Strawberry Punch

Iced Strawberry Punch

Lift party spirits with this light fruity punch. The cordial base is made with lightly poached, pureed strawberries in a lemon sugar syrup. This can be made in advance and chilled in the fridge overnight or frozen in sections of an ice cube tray, then defrost as and when you need them then top up with white wine and chilled sparkling mineral or tonic water for a refreshing summer aperitif. For drivers or children, simply top up the cordial with sparkling water, tonic or lemonade.

Add strawberry or herb flowers, even tiny pansy flowers to sections of an ice cube tray then top up with water and freeze. Pop out of tray and add to punch just before serving.

Chilling time: 4 hours or overnight

Ingredients

  • 450 g (1 lb) strawberries, hulled, sliced
  • 75 g (3 oz) caster sugar
  • Grated rind and juice 1 lemon
  • To serve
  • A few ice cubes
  • 75 cl bottle dry white wine, chilled
  • 1 sliced lemon
  • 200 g (7 oz) fresh strawberries, halved
  • 1 litre (1 ¾ pint) sparkling mineral or tonic water, chilled

Method

1) Crush the strawberries in the bottom of a saucepan with a potato masher. Add the sugar, lemon rind and juice and heat gently for five minutes, stirring occasionally. Leave to cool. Mash once more then strain into a bottle or jam jar and chill overnight.

2) Pour the chilled strawberry syrup into the base of a punch bowl, add some ice then the chilled white wine, sliced lemons and sliced strawberries. Mix together then top up with sparkling mineral or tonic water and serve immediately.

If you don't have any jelly moulds set the mixture in small plastic cups instead. Serves 6 Preparation time: 20 minutes Cooking time: 5 minutes Chilling time: 4 hours or overnight Ingredients 5 leaves gelatine 1 kg (2 ¼ lb) strawberries, roughly chopped 100 g (4 oz) caster sugar 100 ml (3 ½ fl oz) water Juice of 1 lemon 1 vanilla pod Few tiny sweets to decorate Method Put the gelatine into a shallow dish a little larger than the gelatine sheets, cover with cold water and leave for about five minutes to soften. Add the strawberries to a saucepan then add the sugar, water and lemon juice. Slit the vanilla pod lengthways and scrape out the black seeds, add the seeds and pod to the pan and cook over a gentle heat for about five minutes, stirring from time to time until the strawberries are very soft. Discard the vanilla pod then press the mixture through a sieve into a large jug until you are left with the strawberry pulp. Drain the gelatine, squeezing out the water then add the softened leaves to the warm strawberry pump and stir until it has dissolved. Pour into six individual moulds set on a tray, leave until cool then transfer to the fridge until set. When ready to serve, dip each mould into a dish of hot water, count to five, loosen the top edge of the jelly with a wetted finger then turn out on to a plate. Repeat with the other jellies then decorate with sweetie eyes, nose and tummy buttons. Serve immediately.

Ingredients For the pastry 225g / 8oz plain flour 40g / 1 ½ oz icing sugar 40g / 1 ½ oz caster sugar 175g / 6oz chilled butter finely grated rind and juice of 1 small orange For the filling 25g / 1oz caster sugar ½ tsp ground cinnamon 125g / 4 ½ oz blueberries 75g / 3oz cream cheese icing sugar, to decorate Method 1) Sift the flour and sugars into a mixing bowl. Cut the butter into small pieces, stir these into the flour and then rub gently with your fingertips until the mixture resembles fine breadcrumbs. 2) Mix the orange rind and juice together, then stir into the flour mixture, using a knife, until the dough just begins to stick together. 3) Gather up the dough and pat into a ball, cover with food wrap and chill for 30 minutes before using. 4) Preheat the oven to 220 C / 425 F / gas Mark 7. Lightly grease a 24-hole mini muffin tin. For the filling, mix together the sugar and cinnamon in a small bowl. Wash the blueberries, shaking off the excess water, add to the sugar and spice mix, stir so that it sticks to the blueberries. 5) On a floured surface, roll out the pastry. Using a 7.5cm/3" fluted pastry cutter, cut out 24 rounds, re-rolling the pastry if necessary. Line the greased pastry tin with the rounds. 6) Place half a teaspoon of cream cheese in the base of each then top with the blueberries, pushing them down slightly. Bake for eight minutes until the pastry is lightly golden. Allow pastries to rest in the tin for five minutes before carefully removing.
